Raw beetroot, carrot and apple blended whole with ginger, lemon and water. Unlike a juice, nothing is strained out, so you keep 7 g of fibre in a 125 kcal glass. The natural sugars from the beet and apple make it a sensible pre-workout drink about an hour before training.

Ingredients
Method
- 1
Grate the beetroot and carrot; a home mixer-grinder struggles with raw chunks but blends grated vegetables smoothly.
- 2
Add the grated vegetables, apple, ginger, lemon juice and water to the jar. Blend on high for 60–90 seconds, stopping once to scrape the sides, until no flecks remain.
- 3
Add the ice, pulse twice and pour. If it is thicker than you like, stir in another 50 ml of water.
Tips
- Beetroot stains: rinse the jar immediately after blending.
- Add a pinch of black salt and roasted cumin for a more savoury, chaat-like flavour.
Swaps
- No apple? Use 1 small orange, peeled and deseeded; about the same calories.
Nutrition is estimated per serving from IFCT 2017 and USDA FoodData Central and rounded. Your ingredients and portions will differ a little.
