Frozen berries, half a banana, curd and rolled oats blended thick and topped with pumpkin seeds. The oats and curd make it filling enough for a light lunch, the berries keep the sugar lower than a mango or banana bowl, and the seeds add crunch, protein and zinc. Eat it slowly with a spoon.

Ingredients
Method
- 1
Pulse the dry oats in the blender jar 4–5 times to a coarse powder.
- 2
Add the frozen berries, banana, curd and milk. Pulse 8–10 times, scraping between pulses, then blend on high for 20 seconds until thick like soft ice cream. Add milk one spoon at a time only if the blades stall.
- 3
Scoop into a bowl, scatter the pumpkin seeds over the top and eat straight away with a spoon.
Tips
- Keep the fruit frozen and the curd cold; the thickness depends entirely on temperature.
- Add a few fresh fruit slices on top for colour and crunch.
Swaps
- No berries? Use 100 g frozen pineapple; about the same calories and a little more sugar.
Nutrition is estimated per serving from IFCT 2017 and USDA FoodData Central and rounded. Your ingredients and portions will differ a little.
