Chia seeds soaked in water swell into a gel that carries fluid with it and digests slowly, which makes this a useful bottle to sip in the hour before a long run, ride or football match. The lemon and pinch of salt make it taste like light nimbu pani rather than a chore. It is also an easy way to get a couple of grams of fibre in before breakfast.

Ingredients
Method
- 1
Put the chia seeds in a bottle with the water, close and shake hard for 10 seconds so the seeds don't clump.
- 2
Leave for 10 minutes, shaking once halfway, until each seed has a clear gel around it.
- 3
Add the lemon juice and salt, shake again and sip over 20 to 30 minutes.
Tips
- Sip it slowly; a whole bottle of chia gel gulped down just before running can feel heavy.
- Make it the night before and keep it in the fridge; it is ready when you wake up.
Swaps
- Sabja (basil) seeds swell faster, in about 5 minutes, and taste much the same.
Storage
Keeps 2 days in the fridge in a closed bottle.
