Cucumber is more than 95% water, and blended with mint and lemon it makes a thin, pale green drink that costs almost nothing in calories or money. The black salt and lemon give it enough flavour that you don't miss sugar. Drink it in the afternoon, after a walk in the heat, or as a starter at dinner.

Ingredients
Method
- 1
Chop the cucumber roughly and blend with the mint, lemon juice, black salt and water for 30 seconds until smooth.
- 2
Strain through a sieve if you prefer a clear drink, or pour as is for a bit of fibre.
- 3
Pour over ice and drink immediately; it dulls in colour after 20 minutes.
Tips
- Taste the end of the cucumber before using; a bitter one spoils the whole glass.
- A pinch of roasted jeera powder or a slice of ginger in the blender gives it more character.
Swaps
- Replace half the water with coconut water for more potassium (about +25 kcal).
Storage
Drink fresh; it separates and browns within an hour.
