Golden milk is simply warm milk simmered with turmeric, a pinch of black pepper and a little cardamom or ginger. Made with toned milk and no added sugar it is a light, protein- and calcium-rich nightcap that most people find comforting after a long day. A pinch of pepper is traditional with turmeric; the milk's own sweetness is enough once you get used to it.

Ingredients
Method
- 1
Pour the milk into a small pan, add turmeric, pepper, cardamom and ginger, and warm on low-medium heat, stirring now and then.
- 2
Bring it just to a simmer with small bubbles at the edges, about 5 minutes, then keep it simmering gently for 1 minute so the turmeric loses its raw taste.
- 3
Strain into a cup, stir in the jaggery if using, and drink warm.
Tips
- Use fresh turmeric root (1/2 inch, grated) when you can find it; it tastes brighter and less chalky.
- Froth it with a milk frother or shake in a bottle for a café-style latte.
Swaps
- Unsweetened soy milk works for a vegan version with similar protein; oat or almond milk has far less protein.
Storage
Make fresh; reheated turmeric milk tastes flat.
