Green tea brewed with cold water instead of hot never turns bitter, so it needs no sugar at all. Leave the leaves in a bottle of water in the fridge for a few hours and you get a smooth, slightly grassy drink with a little caffeine. Good to keep at your desk through the afternoon instead of a third cup of chai.

Ingredients
Method
- 1
Put the tea leaves and mint in a bottle or jug, pour in the water and close.
- 2
Refrigerate for 3 to 4 hours (or overnight); the tea turns pale gold and tastes clean, not bitter.
- 3
Strain into glasses, add a lemon slice to each and drink cold.
Tips
- If you only have hot water, brew the tea at a gentle 80°C (let boiled water sit 2 minutes) for 2 minutes, then cool; longer steeping makes it bitter.
- A thin slice of ginger in the bottle gives it some bite.
Storage
Keeps 2 days in the fridge once strained.
