Bottled iced tea is mostly sugar water with a tea flavour. Brewing two cups of black tea, cooling it and adding lemon and a single teaspoon of honey gives a cleaner, more bitter-sweet drink for a fraction of the calories, with a little caffeine for the afternoon slump. Brew a jug in the morning and it is ready by lunch.

Ingredients
Method
- 1
Bring the water to a boil in a pan on high heat. Switch off, add the tea leaves and steep for exactly 3 minutes; longer makes it bitter when chilled.
- 2
Strain into a jug and stir in the honey while the tea is still hot so it dissolves.
- 3
Let it cool for 15 minutes, then add the lemon juice and refrigerate, or pour straight over plenty of ice.
- 4
Serve with a lemon slice and the mint sprig in each glass.
Tips
- Add the lemon only after the tea has cooled; hot tea and lemon turn cloudy.
- For a stronger tea taste use more leaves, not a longer steep.
Swaps
- Use jaggery instead of honey for a vegan version: same calories, a slightly darker taste.
Storage
Keeps 2 days in the fridge in a closed jug.
