Kahwa is Kashmir's spiced green tea: cinnamon, cardamom and a few strands of saffron simmered in water, green tea added at the end, and a few slivered almonds dropped into the cup. It is light, fragrant and warming, with only a teaspoon of honey. Serve it after dinner instead of a sweet, or on a cold morning.

Ingredients
Method
- 1
Put the water, cinnamon, cardamom, clove and saffron in a pan and bring to a boil on high heat. Lower and simmer for 5 minutes until the water is golden and fragrant.
- 2
Switch off the heat, add the green tea leaves and let them steep for 2 minutes only; longer makes it bitter.
- 3
Strain into two cups. Stir a teaspoon of honey into each and top with the almonds and rose petals.
Tips
- Keep the tea leaves out of the simmering stage; the spices need boiling but the tea does not.
- Soak the saffron in a tablespoon of warm water first for a deeper colour.
Swaps
- Skip the almonds and honey and it is a 5 kcal spiced green tea, which is also fine.
Storage
The spiced water (before adding tea) keeps 2 days in the fridge; reheat and steep the tea fresh.
