Kulukki means 'shaken': the Kerala roadside version is lime, sugar, green chilli, ginger and basil seeds shaken hard with ice until frothy. Street stalls use 3 to 4 spoons of sugar; this version uses two teaspoons, and the chilli and ginger make it taste like far more is going on. Have it in the evening in place of a soft drink.

Ingredients
Method
- 1
In a bottle or shaker, dissolve the sugar and salt in the lime juice and 2 tbsp of water.
- 2
Add the slit chilli, crushed ginger, soaked sabja with its water, the rest of the water and the ice.
- 3
Close tightly and shake hard for 15 seconds until frothy and very cold. Pour into a glass, chilli and all, and drink.
Tips
- Keep the chilli slit, not chopped, so you get the aroma without too much heat; fish it out before drinking.
- Shake it in front of the kids; the drama is half the point.
Swaps
- Use soda water for the last 100 ml for a fizzy version with the same calories.
