The simplest warm drink there is: ginger simmered in water, with lemon and a little honey stirred in once it has cooled slightly. It is caffeine-free, so it works at night, and most people find it comforting when their throat is scratchy. A teaspoon of honey is enough; more than that and it becomes a dessert.

Ingredients
Method
- 1
Put the ginger and water in a small pan and bring to a boil on high heat.
- 2
Lower the heat and simmer for 5 minutes until the water is pale yellow and smells strongly of ginger.
- 3
Strain into a mug and let it cool for 2 minutes, then stir in the lemon juice, honey and pepper. Sip hot.
Tips
- Add honey to warm, not boiling, water so the flavour stays fresh.
- A few tulsi leaves or a small piece of cinnamon in the pan change the character completely.
Swaps
- Use 1 tsp jaggery instead of honey for a vegan version with the same calories.
Storage
Make fresh; the ginger water alone can be kept 2 days in the fridge and reheated.
