Packet drinking chocolate is 70% sugar. Unsweetened cocoa powder whisked into hot toned milk with a single teaspoon of jaggery tastes darker and more like actual chocolate, with the protein and calcium of a glass of milk. Have it as a dessert replacement after dinner or as a warm post-workout drink in winter; milk's carbs and protein are a reasonable recovery mix on their own.

Ingredients
Method
- 1
In a mug, mix the cocoa, jaggery and salt with 2 tbsp of the milk into a smooth paste; cocoa lumps if it hits hot milk dry.
- 2
Heat the rest of the milk in a small pan on low-medium until it just begins to steam with small bubbles at the edges, about 4 minutes. Don't let it boil over.
- 3
Pour the hot milk over the cocoa paste, whisking with a fork until smooth and a little frothy. Dust with cinnamon and drink warm.
Tips
- The pinch of salt is what makes it taste chocolatey rather than just cocoa-ish.
- For a thicker, café-style cup, blend for 10 seconds before serving.
Swaps
- Skip the jaggery and add 1 soaked date blended in: about the same calories, a bit more fibre.
- Unsweetened soy milk for a vegan version at similar protein.
Storage
Make fresh; it takes 7 minutes.
