Fox nuts dry-roasted until crisp, then blended with cold milk, dates and a few almonds. Makhana is low in fat and gives the shake body in the way oats do, while the milk brings calcium and most of the protein. A good evening snack for children or a filling drink during a fast.

Ingredients
Method
- 1
Dry-roast the makhana in a pan on low heat for 3 minutes, tossing often, until they are crisp and snap cleanly when pressed. Cool for 2 minutes.
- 2
Grind the roasted makhana, almonds and dates in the dry blender jar to a fine powder, about 20 seconds.
- 3
Add the milk, cardamom and ice and blend on high for 30 seconds until smooth and thick. Pour and serve.
Tips
- Ready-roasted makhana from a packet skips the pan step; check it is unsalted.
- Let it stand 5 minutes if you like it thicker; the makhana keeps absorbing milk.
Swaps
- Use 1 tsp jaggery instead of dates for a lighter 215 kcal version.
