Coconut water on its own is already a good post-workout drink, with potassium and a little natural sugar. A pinch of salt, lime and crushed mint turn it into something closer to a proper rehydration drink and much more interesting to sip. Have it straight after exercise or on a hot afternoon; buy a whole tender coconut rather than a tetra pack when you can, since the packed ones often have added sugar.

Ingredients
Method
- 1
Crush the mint leaves in the bottom of a glass with a spoon until they smell strong.
- 2
Pour in the coconut water, squeeze in the lime and add the salt. Stir.
- 3
Add ice if the coconut was not chilled and drink straight away.
Tips
- Scoop the soft malai from the coconut and eat it too: about 1 tbsp adds 30 kcal and a little healthy fat.
- Ask the vendor for a young, green coconut; older ones have sweeter, heavier water.
Swaps
- Packaged coconut water works in a pinch; check the label for 'no added sugar'.
Storage
Fresh coconut water keeps 1 day in the fridge in a closed bottle.
