Panakam is the Rama Navami festival drink from Andhra and Tamil Nadu: jaggery dissolved in water with dry ginger powder, cardamom, a little pepper and lemon. It is openly a sugar drink, so the portion here is small and it is best used for what it does well: quick carbohydrate and a little salt at the end of a long run or a hot outdoor session. Not an everyday thirst quencher.

Ingredients
Method
- 1
Stir the jaggery into 100 ml of the water in a jug until it dissolves completely, 2 to 3 minutes. Strain if your jaggery has grit.
- 2
Add the dry ginger, cardamom, pepper, lemon juice and salt, then pour in the rest of the chilled water and stir.
- 3
Add the tulsi leaves and serve cold.
Tips
- Dark, soft jaggery tastes better here than the pale hard blocks.
- Half the jaggery if you are drinking it on an ordinary afternoon rather than after exercise.
Storage
Keeps 2 days in the fridge in a closed bottle.
