Soft fresh paneer blended until silky with chilled milk, two dates, cardamom and a thread of saffron. Paneer is the highest-protein dairy food in an Indian kitchen, and blended it disappears into a creamy, kheer-like shake. It is a filling post-workout or bedtime drink; keep in mind that the 15 g of fat is mostly from the paneer.

Ingredients
Method
- 1
Soak the dates and saffron in 50 ml of the milk for 5 minutes.
- 2
Add the crumbled paneer and the soaked dates with their milk to the blender jar. Blend on high for 30 seconds to a smooth paste with no grains; stop and scrape once.
- 3
Add the rest of the milk, cardamom and ice. Blend on high for 30 seconds more until creamy and frothy. Pour and serve.
Tips
- Use paneer made or bought the same day; older paneer is grainy and sour when blended.
- Low-fat paneer (made from toned milk) cuts the fat to about 8 g with the same protein.
Swaps
- Replace the dates with 1/2 ripe banana for a slightly lower-sugar version.
