Ripe papaya blended with coconut water, fresh ginger, lime and a spoon of chia seeds. Papaya and chia together give 7 g of fibre, and the drink is light enough for an empty stomach in the morning or on a hot afternoon. There is no added sugar; the 19 g of sugar is from the fruit and coconut water.

Ingredients
Method
- 1
Stir the chia seeds into the coconut water in a glass and leave for 5 minutes while you cut the papaya; they will start to swell.
- 2
Add the papaya, ginger, lime juice, the chia and coconut water, and the ice to the blender jar.
- 3
Blend on high for 30–40 seconds until smooth. Pour and drink within 10 minutes, before the chia thickens it further.
Tips
- Chill the papaya in the fridge first; this smoothie is best very cold.
- A pinch of black salt lifts a bland papaya.
Swaps
- No chia? Use 1 tbsp ground flaxseed: similar fibre, a little less thickening.
