Fresh pineapple blended with a measured spoon of thick coconut milk, half a banana, lime and chia seeds. Coconut milk is high in saturated fat, so it is kept to 50 ml for creaminess; the pineapple gives vitamin C and the chia adds fibre and a little protein. A good afternoon snack or a light breakfast when you want something that is not milk-based.

Ingredients
Method
- 1
Soak the chia seeds in the 100 ml water for 5 minutes while you cut the pineapple.
- 2
Add the pineapple, coconut milk, banana, lime juice, the soaked chia with its water, and the ice to the blender jar.
- 3
Blend on high for 45 seconds until smooth and creamy. Pour and drink within 10 minutes before the chia sets it.
Tips
- Pineapple from the fruit cart that smells sweet at the base is ripe; a green, hard one is sour and needs sugar.
- Freeze leftover pineapple cubes; frozen fruit replaces the ice and makes it thicker.
Swaps
- Replace coconut milk with 100 g curd for a lower-fat veg version with 4 g more protein.
