Shikanji is nimbu pani with attitude: crushed mint, ginger, black salt and roasted jeera make it taste like something you bought at a stall, with a teaspoon of jaggery instead of the usual 3 spoons of sugar. Have it in the afternoon heat or after a walk; the salt and lemon make it a decent everyday hydration drink.

Ingredients
Method
- 1
In a jug, crush the mint leaves and grated ginger with the back of a spoon for 30 seconds until the mint smells strong.
- 2
Add the lemon juice, jaggery, black salt, jeera powder and pepper with 50 ml of the water and stir until the jaggery dissolves.
- 3
Pour in the rest of the chilled water, stir, and let it sit for 2 minutes so the mint flavour spreads.
- 4
Strain into two glasses over ice if you don't like leaves in your drink, or pour as is.
Tips
- Crushing, not blending, the mint keeps it fresh tasting; blended mint turns bitter quickly.
- Make a concentrated jar of the lemon, mint and spices and dilute glass by glass through the day.
Swaps
- Use soda water instead of plain water for a fizzy version with the same calories.
Storage
The concentrate keeps 2 days in the fridge; dilute fresh.
