Sabja (sweet basil) seeds swell into soft jelly-like beads when soaked, and stirred into coconut water with lime they make a drink that feels like a treat but is mostly water, potassium and a couple of grams of fibre. It is a good one to carry to a long walk or drink after a workout. The seeds sit well on the stomach in hot weather.

Ingredients
Method
- 1
Soak the sabja seeds in 3 tbsp water for 15 minutes until each seed is surrounded by a clear jelly.
- 2
Pour the chilled coconut water into a glass, squeeze in the lime and add the salt.
- 3
Stir in the soaked seeds with their water and drink with a wide straw or a spoon.
Tips
- Soak a tablespoon of sabja in the morning and keep it in the fridge to add to drinks all day.
- Chia seeds work the same way but take 30 minutes to swell properly.
Swaps
- No coconut water? Use plain water with 1 tsp jaggery and extra lime for a sabja nimbu pani at about 40 kcal.
Storage
Soaked sabja keeps 2 days in the fridge. Mix the drink fresh.
