Sattu is roasted chana ground to flour, and stirred into cold water with lemon and black salt it becomes a savoury, nutty, filling drink. It gives you plant protein and fibre with no cooking at all, and it costs a few rupees a glass. Have it an hour before a workout for steady energy or as an afternoon drink that stops you snacking.

Ingredients
Method
- 1
Put the sattu in a glass with 3 tbsp water and stir into a smooth paste; this stops lumps forming.
- 2
Pour in the rest of the chilled water while stirring, then add lemon juice, black salt, salt, jeera powder, herbs and chilli.
- 3
Stir well and drink immediately, giving it one more stir halfway as the sattu settles.
Tips
- Add 1 tbsp finely chopped onion for the classic roadside version.
- Use a shaker bottle; it dissolves far better than stirring in a glass.
Swaps
- No sattu? Dry roast besan on low heat for 5 minutes until nutty and use that; the flavour is close though the texture is finer.
Storage
Drink within 10 minutes; it thickens and settles on standing.
