Ripe sitaphal (custard apple) pulp blended with chilled milk. The fruit is naturally very sweet and creamy, so the shake needs no sugar or ice cream, and it gives fibre, potassium and calcium from the milk. Enjoy it as a seasonal treat in autumn; at 28 g of natural sugar it is a dessert rather than an everyday drink.

Ingredients
Method
- 1
Break the fruit open and scoop the segments into a bowl. Squeeze each segment between your fingers to pop out the black seed; check twice, a single seed will crack the blender jar.
- 2
Add the pulp, milk, cardamom and ice to the jar.
- 3
Pulse 5–6 times, then blend on medium for 15 seconds only; over-blending makes it bitter. Pour and serve at once.
Tips
- A ripe sitaphal gives when gently pressed and the segments separate easily; a hard one will not ripen well in the fridge.
- Freeze deseeded pulp in small boxes to make this shake after the season ends.
