A handful of raw spinach blended with banana, unsweetened soy milk and ground flaxseed. The banana completely hides the spinach, the soy milk brings 7 g of protein, and the flaxseed adds omega-3 fats and fibre. A good breakfast on mornings when vegetables would otherwise not happen.

Ingredients
Method
- 1
Blend the spinach with the soy milk first on high for 30 seconds until the liquid is a smooth, even green with no leafy bits.
- 2
Add the banana, ground flaxseed, lime juice and ice. Blend on high for another 30 seconds.
- 3
Pour and drink straight away; it darkens as it sits.
Tips
- Grind a week's worth of flaxseed in the dry jar of the mixer and keep it in the fridge.
- Frozen banana makes it thick enough to eat with a spoon.
Swaps
- Toned milk instead of soy milk works the same, with slightly less protein (it is then veg, not vegan).
Nutrition is estimated per serving from IFCT 2017 and USDA FoodData Central and rounded. Your ingredients and portions will differ a little.
