Ingredients
Method
- 1
Rinse the sprouts under running water and drain in a colander for 2 minutes.
- 2
Combine sprouts, onion, tomato, cucumber, peanuts and chilli in a bowl.
- 3
Sprinkle chaat masala, cumin powder and salt, squeeze over the lemon, toss and top with coriander. Eat within 15 minutes so it stays crunchy.
Tips
- If raw sprouts upset your stomach, steam them 3 to 4 minutes and cool before mixing.
- A tablespoon of pomegranate seeds adds sweetness and colour.
Swaps
- No peanuts? Use 1 tbsp roasted chana for the same crunch and no nut allergen.
Storage
Keep the sprouts and the chopped vegetables separate in the fridge for up to 2 days; mix just before eating.
