Kadha is the spiced herbal decoction most Indian households make when the weather turns: tulsi leaves, fresh ginger, black pepper, cinnamon and clove simmered for 10 minutes until the water is dark and strong. It is caffeine-free and warming, sweetened with just a teaspoon of jaggery. Drink a small cup in the evening or when you come in from the rain.

Ingredients
Method
- 1
Put everything except the jaggery in a small pan and bring to a boil on high heat.
- 2
Lower the heat and simmer uncovered for 10 minutes until the water has reduced to about half and is deep golden brown.
- 3
Strain into a cup, stir in the jaggery and sip hot.
Tips
- Crush the ginger and peppercorns with the flat of a knife before adding; whole spices give up far less flavour.
- Add a pinch of turmeric and a few mulethi (liquorice) pieces if you have them for a sweeter, rounder brew.
Swaps
- No tulsi? Use 4 mint leaves and a strip of lemon peel; it tastes different but is still a good warm brew.
Storage
Make fresh; it is a 12-minute job.
